When I was choosing my color combo I almost went with an sgm/sterling but backed out because I thought it was too light and was worried that it may easily show stains/discoloration. Hope they fix it to your satisfaction.

I got the sterling and don't regret it one bit. I think it's the best looking interior of the 3 with the black contrasts throughout the cabin.
If you take care of the leather with a terry cloth and very little soap and hot water, you will keep it clean. Apply very little pressure, but do it for a while.
My Infiniti G35 had willow (light beige) interior. After 3-years of maintaining it like that, the dealer couldn't believe the condition when I traded it in for my 350.
My previous G with black was a different story - and I've noticed it with the black in the other friends' IS'. It gets very dusty, creases are more visible and once you treat it with conditioner, you have to do it over and over. A lot of the time, it almost looks greasy and patchy.
My sterling leather is as soft as the day I bought it. A little TLC without the grease has done it just fine.

A two tone color best highlight the car's luxury. All black interior is kinda dull and dare i say BMW-like?
But there's not escaping or hiding the dirtiness in light color seats...

got my car back yesterday. they replaced the foam padding as it was deformed from the factory when they took the seat apart. the new one is much thicker and has more cushion.
they also redyed the leather in the lower back rest where it was wrong color. looks much better now! $324 worth of fixes under warranty.
