That's a big project, but I see you have considerable experience with it. I would actually do this as a business, but selling salvage title vehicles brings its own set of challenges that have nothing to do with quality of repairs.
Good luck with the restoration. Hopefully there won't be any gotchas like seriously damaged wiring harnesses. Few things are worse and few things are more difficult to troubleshoot.
FWIW, I would price new subframes before I bought one from the junkyard. I priced the front subframe for a project I am considering, and it cost a whole lot less than I imagined it would. At least you know for sure the new part meets factory tolerances for straightness.
