Your wheels will be INSET, meaning your wheels will or should not be touching the quarter panels. Running a 275/30-20 tire will be perfectly safe. STOP over thinking things.
The front is more of a concern, but running the correct offset/tire will prevent that.
Running higher offsets means your wheel is in more, less flush. You wont have a problem rubbing on the outside. if your rear is a +45 you can go 275/30/20 with no mods in the rear.
have 275/35-19 +38...slight rub only on driver side over large bumps! going to roll the fender buts its so flush i can put a finger between the fender and tire! Front i should have went more....

ride's fine...i'm not too picky though when it comes to that. I also dropped the car and put the rims all at the same time so I couldn't tell you how it compared to stock springs/wheels.
Everyone I know with a 2IS has the DF210's for 3GS though. My brother with the white 08 with the Autocoutures has the same setup.
