That looks a lot like fake vinyl to me, not real carbon fiber. Is that true? I don't even see the ridges from the weave? So this is like putting stickers over your dash pieces? Wow, that's all i can say.

Is it possible to clearcoat this after apply the fabric to the trim pieces? Or would you need some special epoxy?
Truciet: Have you scratched the carbon fiber weave at all yet? It seems easy to damage since it is not protected by another layer. Also, did you cut out templates of the carbon first? Did you use a razor to cut excess fabric? This carbon fiber feels very strong and resistant.

its possible to clear it, however, you would have to sand it to make it really smooth then polish...
i like the texture so i'm going to leave it as-is. so far its still pretty clean. it gets dusty but i just wipe it away with a cloth and its fine. it rained a lot the other day and my window switches are just fine. it didn't feel damp either.
