did some more technical research, 95% sure it could be a bad vacuum booster one way check valve.
anyone agrees with this conclusion according to the symptom?

Just kidding. I just started working from home so sometimes I don't use my car for a week or two. I have also noticed the brake pedal going hard after being left off for so long. The brakes operate normally after starting the car, but I'm still interested if you resolve this issue.
