That is the exact reason I went out an bought a beater, yes why spend $2k to save $2 at the pump? You must keep in mind everyone's situation is different. I drive to work 40 miles each way, the 350 is HORRIBLE on mpg and having to pump only premium doesn't help. I was spending $60 every 3 days. Not to mention the killer miles I was adding to further reduce the value of the car. Now I put $32 to fill up and last me a full week.

40+mpg is definitely possible. Just set the cruise control at 45mph on a long flat rural highway... 
I usually get 30mpg even in 'city' driving by trying to stay as close as possible to a steady 45mph. This means timing traffic lights to roll through when they are green and coasting (the fuel injectors shut off) from quite far away when you know the light will be red.

The best I could do is 26 MPG on my IS250 and I am extremely happy, I hardly have to fill up gas compared to my last turbo awd car.
