I just purchased a 2011 IS250. First time Lexus owner here. Coming over from the BMWs. Here are the pics:

She got nipped in the rear. I would like to do some plastic surgery on her behind, what kind of parts do I need to get all patched up again. I was searching online and saw this diagram:
The driver rear quarter panel is going to require some "pulling" to get it back within specs. The trunk hinges may also be damaged as well. Very hard from just those pics. So far, you seem to have the rear bumper diagram good.

That looks anywhere from $3,500 -$5,000 worth of work depending what we can't see and shop labor rates. The way Sewell can match your paint is to look at the paint code in the door jamb.
It doesn't really attach to the bumper bar. The rear bumper cover is held in place by the black plastic tabs seen behind the rear wheels in your pictures. Theres also two metal tabs you don't see in the pics beneath the trunk lid. Those hold the bumper cover in place fairly well and you secure it in place using screws.
