help! grinding down wheel offsets!

help! grinding down wheel offsets!
Hey guys,
I picked up Vossen Cv1s for a really good deal. The wheels are:
Front: 20x9 +20offset
Rear: 20x10.5. +25 offset
Ideally I wish the offsets were 38/45. I want to make them work on my IS350 without stretching the tires alot. I'm looking for a flush look. There is a shop that has a good reputation where I'm from (Vancouver, Canada) and since vossens are 1 piece wheels they cannot take them apart and grind the offsets down to much. He said he can grind 8 mm. So my offsets would be 28/33. Has anybody ever grinded down offsets? And would 28/33 be okay for my ride?

Do you have any idea what tire size I'd be able to run with 5mm more + pulled and rolled fenders? And what kind of cost am I looking at for rolling+pulling fenders?
