Default Aftermarket Wheels 18' Help

Hey, I fairly new and I had couple questions I just want to verify before i make a purchase. I have 07 IS 250, with the 18' wheels as 225 front and 255 back. So question is
- If i wanted to go like 235 front and 265 back with either 35/40 Width, would that work?
- As well as what rim size should i be looking that would fit my current stock size now, as well as fit the fatter tires I plan to get later down the road, i was thinking 8.5s but just wanted to make sure.

And if someone could maybe explain what offset to look for :3 i googled my car and said it recommends i get a high offset, but what is considered high? And what would you recommend, same offset for both front and back? I understand most of this is probably personal pref, but if i was going for nice casual look, what am i going for
