Why does every reviewer seem to complain about the 3IS being outdated?

Because I’ve driven the 350. My previous car, 2011 Infiniti G37S, was more powerful and fun. Nissan/Infiniti’s aren’t reliable so I got rid of it at 80k miles so I wouldn’t have to deal with headaches. I didn’t get the IS 350 because I didn’t want another V6. Next question please.

OK, well even right now with coronavirus, let me know for how much $$$ you can find a Brand New, 2020, IS350 FSport, RWD, Atomic Silver, Red Interior, full NAV + Mark Levinson, Blind Spot Monitor/Cross Traffic Alert, and NEW FSport Rims, (also preferably auto-closing side view mirrors if they have that now on FSport). What the heck - just post how much you THINK that'd go for.

Ya well me too also exactly, but a CPO with 34k miles, for $35k, plus a car cover, and later 2 new complimentary Michelin tires, but the NEW FSport Rims add around $2k, (and I THINK they now have auto-closing side view mirrors), so anyway, NICE THOUGHTS & Good Luck!! hahahaha PS >>> hope you're familiar with the concept of "inflation"!!

Having owned numerous new(er) BMWs, I think the criticism is much about the infotainment and powertrain.
The infotainment is not horrible, but lacks some modern tech.
The Lexus powertrain criticism is mostly because of lack of power and MPG when compared to the competition....but that's not completely a bad thing.
Toyota/Lexus typically keep engine in use for an extended period typically because they work all the bugs out but is often seen as outdated....tradeoff is reliability. BMW for example often adds power/tweaks it's output but sometimes at the expense of reliability (their I-6s routinely have been very reliable outside of the HPFP fiasco). MPG goes along w/ this although Lexis uses DI and port injection to help reduce carbon buildup that BMW and Audis see despite increased MPG.
It's all a wash IMO, I traded slightly less sportiness for much more reliability for my DD and I'm ok with that personally.

They also both have identical 54/46 weight distribution and both weigh 3700 pounds and change. (Using 350 AWD as reference)
but I’m sure a G37s coupe with a 6 speed is certainly more fun.

Specs I found have a 2012 G37s Coupe 6 speed doing a 5.6s 0-60 and a 13.8 quarter mile. Compared to a 350 awd that’s been tested at 5.3 and a 13.9. Also g37 has a 3.7L engine vs 3.5 and the 2GR-FSE actually makes more torque (277 vs 269). I’m assuming a G37s coupe would beat it at the track but I’m terms of straight line power they are basically neck and neck well until into a speed the average driver won’t reach.

aftermarket support for VQ’s is nuts vs the 2gr-fse. G37s gets an LSD to. I test drove a G37xS and they’re actually really fun. That V6 reving to 7500rpm stock is wild. I still don’t get how there is virtually no aftermarket support for the 2GRFSE it’s been out since like 2006.
