If you aren't bleeding the brakes, they won't get installed. There's no point for a shop to install them if they have pressure bleeding equipment they prefer to use.
well the plan was that I was going to start bleeding them after track days myself....
The master cylinder is located on the driver side, and many people would agree to start on the corner furthest away from it and work your way closer. This means to start on the rear passenger side first, then rear driver, front passenger, and finally driver side last.
