Using a flat panel computer monitor could work if you can overcome these three obsticles.
1). You will need to find a LCD monitor with power supply external to the monitor. Hope that supply is producing 12 volts DC. Then you could simply run the monitor off your 12 volt car system. If not you will need to use a 12V Power Invertor (sold at many stores) to produce 110V AC to run the monitor. If you wanted to use a LCD TV instead you can look at the Sharp Aquos TV. The 13" and 15" model run off an external 12 volt power supply.
2). If your planning on plugging in a car DVD player or VCR you will need an up converter from composite video (or S-Video source) to VGA. I'm using one from www.avtoolbox.com called the XGA Theater $129. It runs off 12volts DC and also provides a TV tuner displaying at 800x600 or 1024x768. This is very important as most 15" LCD displays operate at native 1024x768. If your upconverter won't do 1024x768 you would end up with a small picture in the middle, unless your panel would stretch the image (not very common).
3). Last but not least and probably the most difficult part of the job. You will need to figure out how to mount the panel. Several LCD screen mounts are available from www.ergotron.com
All-in-all it's probably still close to $700 to use a computer VGA LCD display instead of a LCD designed for automotive.
