Discontected MAF and lots more power

Discontected MAF and lots more power
Just wondering if any one had some clues to this phenominon.
I have a Austrlian delivered 04 LS400 that has a intermitant power delivery problem. If I floor it, it will almost always have as much power as a 4cyl camary. If I 1/2 thottle it, it will be much quicker than full throttle.
Ocasionally it works as it should under full throttle and goes pretty nicly. So after trying all the usual (replacing filters, cleaning tb etc) I thought it may be MAF sesor, so I disconected it and wow.... it spun the wheels from stand still and went hard. It did however, ping alot (I was using 91 octane - i usually 95 or 98).
After some research, I found if you disconect any of those main sensors it disables all sensors and just runs on the default settings. So i am thinking it could be the knock sensor detecting all that pinging that is reducing my power. So how to reduce ping???
change the timing (i thoungt on these cars i didn't matter what you timing was set at,as the computer adjusts any way.???
any other casues of pinging????
