Here's one last question...Why would the dealership only recommend to change just the timing belt and water pump? Actually, Clear choice did the same...I called another place a buddy recommended and they would do: Timing belt, water pump, thremostat, crank shaft seal, coolant & drive belt for $850 (Plus $150 for both pulleys).
Why wouldn't you change the pulleys, idler, seals since youre down there? It's the cheaper option (not by much) but does this make sense?
So the question is:
What parts would you guys recommend be changed?

On my non-interference 94LS my first T-Belt wasn't until 168,000+ (when the fan bracket support bearing failed) & I just went ahead & changed everything that was spun by both the T belt & serpentine/accessory belt.
Felt I owed it to her.

Both times the shop offered to either do the timing belt only or the full replacement option (water pump, seals, etc.). He said it was totally up to me and explained that many of the parts had to be removed and putting them back on would likely be fine - my choice. I don't normally buy into replacing a part that is not defective. However, the engine components are different in that if one or more of those other parts fails later on then it will be costly to tear the engine apart again to replace them.
Either way it is your choice. I chose to replace all the parts you mentioned since the front of the engine would be torn apart. If your budget will allow it why not have the peace of mind? At least that was my thinking.

Yeah not being able to bring in your own parts seems strange. I would tell them you want to see what they are putting in yours I mean if you are paying for Lexus OEM they need to show you

Steveski,
My thinking was do I really want to pay for what would be essentially a 2nd timing belt change worth of labor because I chinced out on a $45 pulley?
Davenport charges you dealer list for parts installed (despite the fact they pay less)
& I was told that is policy regardless of if you show up with parts in hand.
My parents 2 LS vehicles have been serviced on several occasions at the Plano location.
Great people, but that policy sux. Bottom line.

Yeah that is not a great policy since Lexus OEM parts can be had at such lower prices. I agree that being cheap could cost more in the log run especially if a part fails deeper inside the front of the engine like a seal, etc. That is why I went ahead and had them change all parts, etc. for peace of mind.

Question: How long do water pumps normally last?

Many of the American cars I have owned had water pumps that failed after 50,000 miles. My buddy has an STS that just turned 75,000 miles. His WP failed
With Lexus OEM equipment I bet it would not be uncommon to last well over 150,000 miles. Of course keeping the radiator fluid clean per service guidelines is critical to get the best longevity though.

Finally broke down and put my baby in the shop today to get this done...I was able to find a place a friend recommended called Tokyo Town (yeah I know the name is kind of cheesy) who have guys that worked for Lexus...All in, it'll be just under $1100 for timing belt, wp, both pulleys, therm., coolant, crank/cam seals, and a drive belt...Will get her back tomorrow...
