As long as your setup is hubcentric and the lugs are holding the wheel properly the sky is the limit with your 7.5" (?) high positive offset wheels.
It's common to see up to 38mm spacers used on like 10.5" wide wheels in the rear. fenders are commonly destroyed and flared in order to fit aggressive pokey wheels.
