Low idle, fouled plugs, souttery acceleration

Low idle, fouled plugs, souttery acceleration
99 LS400 with 170k miles.
I recently did alot of work to the car and when it was put back together, I experienced some really rough running. I changed all the spark plugs with NGK iridiums which helped alot, but after maybe 15 seconds of driving my car started dipping its idle to maybe 100-200 rpm and sputtering on acceleration. I pulled the spark plugs to find every single one was black with soot. I plan on reading the codes very soon, but until then, does anybody have any suggestions or thoughts about what could possibly be the problem?
