I've got a crystal white/saddle UL and have never seen another saddle at all in person, I think it's pretty rare.
I also have an 04 UL crystal white with black/saddle interior. I found it on accident looking for a white with black interior (unicorn). so i bought it.

Kidding aside I do think they are exceedingly rare. In my search - and I looked at tons of cars - I only ever saw this one.
I actually way prefer CW to black, black being such a royal maintenance pain. It can look terrific but the amount of work to get and keep it there is far too much for me, and without that it looks ratty.
I searched for a saddle interior LS, but couldn't find one withinn a reasonable distance. Ended up with a Flint Mica on black with semi aniline leather. I won't complain. LOL
