I've seen new motor oil (looks like clear cooking oil on the oil dipstick), slightly used motor oil (looks brown), and downright dirty motor oil (looks like black tar).
There's also the notorious cases of oil gelling in some Toyotas and Lexuses, e.g. some year 2000-ish V6 models.
Not sure about broken down oil...

Read BITOG web site and you'll get a good idea on what broken down oil is like. The additives are not present in sufficient quantities having been used up or burned up and the oil picks up carbon based combustion products. It also picks up metal and metal oxides from engine wear. As a result of additive loss the viscosity transitions from cold to hot and back again becomes uneven. Send you oil in for analysis to Blackstone or other labs to know on your car for sure. My 04 came back with around 9000 miles as a safe point.
