Sorry for the preamble but I wanted to set the scene prior to continuing

in my last car I managed to fit a menu driven aux in for both audio and video so that I could connect a discreetly positioned Raspberry Pi to play media files access internet etc etc

So can anyone advise on an aftermarket interface that opens up a new audio AND video input to the LS430 headunit that is still menu controlled (select / deselect) from the standard controls ? ( I realise that the new plugin will need external controls) .

Thanks guys.
Sorry, there is nothing on the market that will help you on the video side. NADA.
For audio Grom, Vaistech, and USA audio all offer modules that connect easily to the stock head unit for audio in via Bluetooth, USB, or headphone jack. The units I have seen typically "Y connect" so no wiring skills required. You will need plastic tools to remove the bezel / surround and not damage your interior. 5 bucks at Harbor freight gets a set. Hard to work on modern cars W/O them. Seems like they use more and more of the push in plastic "Xmas tree" type fasteners. I finally bought a set and then wondered why it took me so darn long.
So far my plan is just a 7" tablet and a Bluetooth module. The 7" is close in size to the nav screen in my 05, a 10" tablet looks wonky, a 7" is a good fit. I was initially thinking of a bottom hinged tablet mounted over the existing nav screen but would be a PITA to flip it down every time I shift to reverse to see the screen when backing up. I still kind of like that thought, but will likely mount my tablet over the existing head unit. Love the sound of the ML system, and I have no need for video onboard. It is nice to have a rear lighter for tablet power to folks in the back via adapter.

The grom bt3 works great with the factory ML system on a 2001. No option for Vline though. I have a bt3 with the HD radio module and have been very happy with it for streaming music off my phone, calls, and the HD radio.
