IMO, based on the info posted, I'd have the low mile car given a thorough prepurchase inspection. It's unusual for an LS to get repainted unless there's damage. This model get a hand rubbed paint job from factory. The sticky interior has been addressed as well as leaking fuel pressure gaskets. Not all have brake accumulator issues but be aware it's a $3-4k job if it goes bad. I'd plan on new coolant and brake fluid. I look at one car seller site and didn't see much for sale in Nashville area.
I think the other car has too many miles. These are just my opinions. I'd suggest waiting for a newer year with less than 140k miles. Prices are over inflated right now. Maybe your wife's choice is a better option if you must buy now.

Was just looking at that. I was trying to avoid too much travel to pick one up ( Ls). Because your right about my area!!

You might want to post on the GS forum if you want an opinion. Some people are fine with older cars that may need work. The issue with any LS, they are computer centric and some parts are crazy expensive with no aftermarket parts available. You can always buy the Techstream software for your laptop. You indicated that you are mechanically capable, so you have that in your favor. Lot's of posts with how to do certain repairs here as well as advice on sourcing parts.

There is a decent LS near me if you want something that is mostly sorted
