Availability - When was the last time you've seen an IS-F in the city? So a flatbed is going to cruise around the city looking for a car rarely seen?
Camera's - there are tons of them - Even if you used a flatbed, how do you get out of the city cleanly without someone checking your paperwork?

The engine immobilizer is a state-of-the-art anti-theft system. When you insert your key into the ignition switch or bring a SmartAccess fob into the vehicle, the key transmits an electronic code to the vehicle. The engine will only start if the code in the transponder chip inside the key or SmartAccess fob matches the code in the vehicle's immobilizer
There's much less reasons to not steal a luxury car in Manhattan than there are benefits to taking one.
It's easier to envision Ry's friend being pick pocketed near where the car was parked and the person getting in and driving away. That's why I asked Ry for more info. The full story should at the very least be entertaining.
