Default Kitchen appliances.. opinions?

So im finally gunna replace the 17 year old appliances in my kitchen and laundry room.. Anyway, i picked out what i wanted yesterday and ordered it from Frys. I picked up all GE appliances.. Im debating right now, though, whether i should swap out the stove i chose to upgrade to a convection stove. I have a gas stove.. and the stove i picked out is nice and all, but for a couple hundred more, i can get the next step up.. to those who are knowledgable, what exactly is "convection" and is it worth the upgrade?

Convection basically has a fan that blows the hot air inside the stove to provide a more "even" flow of heat. It's also more efficient and takes less time to cook. I have dual stoves and they both have top coils only, which I don't like because it doesn't cook the food evenly. That's when I use convection and it seems to be a little better, but I'd rather have a bottom coil too.
