Why would you chose a different viscosity than recommended in the manual? not questioning your judgment, just want to know if there is a particular technical reason for the choice.

I usually use 5w-30 for my Audi, thought it would use the same, but I saw that it said Sae 0w-20 just want to know what brand is good because can't just use 0w-20 because the manual said if use 0w-20 need to do an oil change after. If its SAU0w20 what brand would u recommend?

Do no, I repeat do NOT, go with a viscosity that is not listed in your manual. You are listed as 0w-20 because engines are becoming closer and closer tolerances, and because your turbo shares from the same reservoir.
5w-30 in a motor that calls for 0w-20, would lead to burned bearings and excessive engine wear because the oil will never flow as smooth and thin as the engine requires.

So it depends, does Toyota add anything to their oil that you'd be missing if you bought a generic mobil 1 bottle?

I'm not really sure about this. Nissan for example has their own version of oil for their cars which has additives in it to help with the excessive valve tapping from their VVT. When I was looking at the G37, a number of guys on the forums discussed how loud their tapping go when they got away from Nissan brand oil.

BTW, SAE tests are exhaustive and include minimums for detergents and other additives to resists rusting, shearing and others. There is also API ratings and tests, similar and in most cases overlapping wit SAE's. Most oil manufacturers get both seals on their oils, to ensure that they get chosen by fleet maintenance purchasing managers.
Bottom line, use what is stated in the manual for most driving conditions and only deviate if advised by the dealer or manufacturer to address a specific condition.
