I went from a 2008 IS250 to a 2019 IS300 (Blackline Edition) and now to a 2023 IS500. Each was a step up from the one previous. To echo others' comments, the interior is extremely similar to the previous generation, except with a few small changes/upgrades. The handling is very similar too, but a little better. I found the familiarity to be very nice. Hopping into the IS500 was like saying hello to an old friend, and being so similar also made the very first drive feel like I'd been driving it for the past several years. Right up until laying into the throttle for the first time. That's when I realized the IS500 was something special. Although I've never owned a 350, I would imagine the 500 to basically be a 350 with a hefty supply of extra attitude. It's been a perfect daily driver, and on a 400 mile road trip it is very comfortable.
For me it has been incremental, slowly stepping up my IS game- but also has definitely worth it in terms of driving experience (each one better than the other). Cool you've got the M3 for fun and games. Wife & I have a fully built S13 and a 370Z for toys so I sort of get what you are asking. Taking what your M3 delivers out of the equation and assuming you'd be trading in the 14' IS350, I think you would find the IS500 to be quite a nice upgrade.
