Unhappy 1JZ Spooling Problem

As I left work this morning to get something for breakfast a 350z jumped on my tail. Thinking this would be a great chance to let him know he bought the wrong car, I punched the gas and started to spool . As I started to build boost, my car sputtered real bad (kind of scared me), and then picked up again. Basically fell on it's face !?! I thought, maybe just a mishap? So.... I decided to give it a go again and it spooled with no problem. Figuring third time was charm, I took off and it happened again. This is not a consistent problem, but it does make me wonder what the problem could be? I figured maybe the plugs were fouled out? But I just replaced those last week with NGK's and had to gap them at .28 so that the car wouldn't sputter at 10-11 psi. Anyone have any ideas??
PS - I have new turbos with about 40k mile on them, but I want to use these as long as possible.

Do a pressure test, might have a boost leak somewhere! On map based systems you will idle and drive around fine with an intercooler hose popped off; but if you gun it all the boost flies out the system and its basically running NA

It wont sputter like that if he blew an intercooler pipe though. It just wouldnt go past 0 on the boost gauge. I'd check the shaft play
