Default Overheating Problems

Okay, so here it goes its been almost roughly 5 months that Ive been dealing with this headache, been going back and forth to the shop and what not. Alright, so far i replaced my radiator, thermostat, fan clutch, water pump, and seals. Unfortunately my car is still overheating =( so this is what i have concluded when im cruising / flying my temperature needle rests below midpoint or lower, and the other day during rush hour Chicago traffic stop and go the needle rose all the way up to below the HOT redline =/ when i stomped on the gas, the needle will always go down =/ Another thing while inside the car, when the temperature needle rises i hear a lot of water swooshing noises? When i hear the water swoosh noise, the needle tends to go down to below mid line ? Does anyone know whats going on and what i can do to fix this? please chime in this is getting really annoying =(

i would get the cooling system pressurize tested. hopefully you dont have a broken head gasket.

also wiggle the ECT see if there's any changes to temperature. if yes, you got a wire integrity problem.

make sure the cooling system is well bled. i doubt its your hg bc if it were it would be overheating under higher pressure for example driving on the hwy will make it overheat but not overheat at a stand still. are you loosing coolant anywhere? was your rad cap replaced along with the new rad? both hoses are the same temp when car is at operating temP?
