Default Loss of power? 1995 SC400

Hey guys purchased a 95’ Lexus sc400, 179k miles. Lots of maintenance records etc etc ( water pump / radiator / timing belt, trans serviced) all the good stuff. Anyways drove it home and something just feels off. Watching YouTube videos of stock 400s taking off the line and hearing wheel screech and just hard acceleration with higher rpms is something I feel mine is missing ? One issue I have come across is that my temp gauge is reading quite low. Normally of course a car should be at right at the middle, but this is probably a quarter down ( even after driving the car for about 1-2hrs so it should be plenty warm by then). I’ve read thermostats go bad and sometimes are stuck open thus practically overcooling the engine? Could that be a cause to why I feel as it doesn’t have enough power? When I accelerate off the line rpms go up rather slow sticking at 3-3.5k and not going much higher, sometimes if I press all the way down it like realizes practically and rpm shoot up and it takes off. Any suggestions?
