See...this is what I am talking about! Believe me, I am STILL kicking myself for not getting the 35 series tire in the rear. I got the 275/30's and they are pretty thin...thinner than the front tires. However, the 275/35's would have a little thicker of a sidewall than the fronts but if anything this setup would look better, provide more traction (more sidewall flex) and more comfort around bumpy roads. I got this setup last year and I am still kicking myself. I will change out the rear tires when they wear out.

Your current 275/30-19 calcs to a 25.5" tire diameter (my stock combo is 26.6") and with the 3.769 gears spits out 57.7mph at 6250rpm.
Changing to a 275/35-16 gives 60.1 mph at 6250rpm.

I have a spreadsheet that allows the GS4xx gearing and tire sizes to be changed and speed in gears shown. PM your email to me and I can send you a copy.

235/45-17's with the 3.769 gearing gives the following mph at 6250rpm:
1st 37.2
2nd 57.3
3rd 87.7
4th 124.9
5th 165.9 (although the ECU will limit you lower than this)
with stock 3.266 gearing:
1st 43
2nd 66.1
3rd 101.3
4th 144.2
5th 191.5 (although power and the ECU will limit you lower than this)

I want to run 275/35/19's for a different reason.....LOL. I want my rear wheels to fill the wells a bit more in the back. Im running Tanabe NF210's. Right now Im running 275/30/19 which is the closest plus size for 19's. I would love to get a higher Final Drive Diff along with the bigger 19 inch tires. Just waiting for my rear tires to wear out.

When I need new rear tires, I'm going for the 275/35/19's this time instead of the 275/30/19's that I have now.
It will fill up my rear wheel gap a bit and it will ride nicer with a taller sidewall. It will hurt my initial acceleration, but I can always hunt for a Supra TT auto rear diff with LSD or a common GS300 open diff to offset the taller gearing with the bigger diameter tires.
My other option was to go with 285/30/19's but that size is odd which means less selection and more expensive tires in that size. Plus, it may balloon out more because the tire got wider, but the rim didnt.
I plan to hit up Brainerd or MidAmerica this season, so Im sure these tires will be getting a workout.
