I believe this is normal, I get this on my GSF as well. In cool weather, when cruising on the highway the oil temp may drop very slightly from the middle which I believe is due to the consistent cool air being fed on freeway drives. But if you are sitting at a stop light, there is less wind blowing into the cool coolers which causes the oil temp to raise a bit during idle.
