Issues with filling gas tank in 99

Not sure if this is just operator error. But wanted to raise it with the experts...
Whenever I fill-up (yes, every time at every different station) the pump auto shut-off kicks in but I am still able to put at least 1.2 to 1.5 gallons of gas into the vehicle by "over riding" and continuing to pump. Never overflows the tank, just keeps filling. I'm doing a bad job of explaining this, but hope you get the gist.
Once full, the gas gauge barely touches the F, and then drops almost immediately (after say 15 miles even if I average 20 MPG on the new tank).
My empty light also comes on when I have about 3 to 4 gallons left in the tank.
All of these things aren't really major issues, but I'm just trying to figure out if this is normal or if something weird is going on.

Sounds like the gauge is consistently reading low... it always thinks there's less gas than there really is.
I haven't tried overriding the gas pump like you describe, because I'm always afraid I'll go too far and spill gas on the outside of the car. I don't know how much "extra" gas is normal.
My experience with the 300's has been that the gauge reads above full initially, but it does start to drop faster after getting below the full mark. It slows down again when it gets closer to empty, and then the light comes on with at least 2 gallons left.
If it's bugging you, the culprit is probably the sending unit inside the gas tank. No idea what it would cost to replace, but it's probably not worth it since you understand the current behavior.

Modern vehicles have a vapor recovery system which brings the fumes back into the gas tank from the engine compartment. If one overfills, the gasoline will travel the wrong way to the engine. Generally the pipes are high up in the filler tube so folks need not worry.
On the low end, one should visit a gas station when the tank reads 1/4 full. Us with '99 model have a smaller gas tank and that means more frequent trips to the gas station.
