I can't wait to get over a bright blue handicapped paint job on the deck of the parking slot in bright sun to illustrate the color capabilities of the camera. The OP just wanted to know if the camera had a B/W setting and now we have all these wonderful replies including pictures.
I think the camera is meant to show obstacles like children's tricycles, for example, and not be as color-accurate as our smart phones.

Nor does it seem to be a parking assist (thus no guidelines). Exactly as you said, just for obstacles. If you want help parking, Lexus wants you to pay for the sensors, etc.
I'm just comparing this to my 2011 IS 350 but the back-up camera picture looks grainy and color less. Like a grayish screen. The Nav has more of a blueish screen with a lot of grey.
I believe Lexus cheapened up the rear camera on 2015 models. On my 2012 GX it was crystal clear both day and night with no pixilation, on my 2015 it looks horrible all the time. Very grainy and washed out color. I took it back to the dealer and complained but as suspected they said all is "normal". Others on the GX forum said the 2014 models looked fine and were comparable to earlier ones so they must have started cheapening them up in 2015....sad. The LCD screen was also changed, it has so much glare on it from natural light in the cabin that it is mostly unusable in all but certain light conditions. Come on Lexus, get a clue!! Unacceptable for a $60k vehicle!!!

It is indeed very gray. See the pictures below. The first one is my '13 RX, and the second is the much improved camera on my '14 IS. Very big difference in terms of color, but the RX camera does what it needs to do, which is to show me what is directly behind my vehicle before reversing. These two photos were taken just minutes apart.

Thats exactly what I'm looking at minus the bright green highly manicured lawn. My IS is a 2011 and the RX is 2015. Guess it wouldn't be bad if I didn't have the two to compare.

If you both have the nav screens, then it seems like Lexus downgraded them in the latter years of the 3rd gen…
I decided to try the same experiment as JDR76. In my case, I am comparing a 2013 RX 350 with Nav and a 2015 ES 300H with Nav. The one below with the ES in the photo was ... well ... taken from the RX, and the one with nothing in it was when I pulled the ES into the garage so that it had the same vantage point as the RX. As you can see, the color is slightly better in the 2015 camera than the 2013 camera - but neither is great and I certainly wouldn't consider the 2015 to be "much improved." Clearly the improvements depend on the model - but like someone else said, both are good enough.
Taken from RX, looking towards west at about 5:30 PM so the sun was relatively low for the season
