Do I need to take off the whole dashboard to replace the wood trim? Has anyone done that before? It would be nice to see on line instructions!

nope. just remove your airbag. for the center piece. there is a 10 mm nut right at the passenger edge of it, on the back of the piece, and the drivers side is a clip. the vents will come out too, and then remove the wood from the vents. same deal on the lil passenger one. but, that one i THINK you need to remove the glove box and get to the screws that hold the vent in under the face of the vent. FYI, don't forget to reattach the cable to open your glovebox. when i did mine the first time, i slammed it shut before reattached that cable, and yeah, i had to tug pretty hard, and then replace the latch i had to break. good luck.
