The solar sensor is a photodiode which depending on light intensity adjusts the Air mix control servo motor. If that is disconnected then you probably wont be affected too much, maybe on really sunny days you will need to turn the temp lower to get to a lower temp.
If the cabin temp sensor (vent thingy) is disconnected then you may encounter what you described.
If the auto light sensor is disconnected (clear sensor on US drivers side) then your lights wont turn on/off automatically.
There is an additional ambient temp sensor which could also cause that prob.
