First off, keep it simple; verify that your cooling system is in good operating condition. If that all checks out, then you've got a problem worth researching.

I think you're missing my point. When you run the AC, you increase the demands on the car's cooling system. Think about it; that heat has to go somewhere. Running the AC means an increased engine load to drive the compressor and pre-warmed air hitting the radiator after it has passed through the condenser (radiator is downstream from the condenser). This is all fine if your cooling system is working 100%, but if it's not and it's operating at some reduced capacity, then maybe it's only adequate for the lighter load of regular driving but can't handle the full load of driving AND running the AC. It could be as simple as low coolant level or air in the system, but then again, it could be something more mechanical: slipping serpentine belt, thermostat, broken/missing fan blades and/or shroud, radiator cap, leaking radiator and/or hoses, fan clutch, water pump, advanced engine timing, etc. etc. etc.

Make sure your cooling system is operating at 100% first, if it's not, then look for the easiest stuff first.
