Default 1jz-gte warm up time

I have a stock 1JZ SC300 stock computer and turbos with 3" radiator and 2 e-fans.

It takes my car 15-30 minutes to reach operating temperature with the gauge just slightly lower than halfway.

Is this normal? Could I have a stuck thermostat I was also reading about an ecu coolant temp sensor...

Or is because of the cooling upgrades?
Engine seems really hot but temperature reads low...

Any input appreciated thanks

check what the coolant sensor resistance is. there are two different sensors one for ECU one for gauge in car. might be the sensor for gauge in car is bad.

also could be open thermostat if it really takes that long to get warm, but do diagnostics on the sensors first.

the cooling upgrades wont affect anything, the thermostat will still function and keep the engine at proper temps.

Where would these sensors be located and a good place to test the resistancez?

Those sensors are on the upper coolant pipe above the alternator, the hose that returns the coolant to the top of the radiator. Follow the hose back and you will see them both right there. disconnect the plugs and test the resistance or better change them out with new ones.
