So I have a 1994 sc300, auto, with the 3k3 paint code (a maroon-ish red), grey interior. It has 172.5k miles, and I've done a lot of the maintenance it needed to get running smooth. I was wondering what would be a fair price for it? It has been garage kept since bought until I got it as the second owner in March.

I would ballpark it around $5-8000 depending on condition and maintenance. Photos would certainly help.
I can also say you're better off trying one of the online auction sites (Cars and Bids or BringATrailer where these cars seem to sell strong), FB Marketplace will get you 1000 dollar offers all day long.

Right now the market for used cars is the absolute craziest it’s been since right after WW2. The NADA value on my car actually increased by about 40% over the last few months. It’s definitely a good time sell your car. This news is great if your selling a spare car cause whatever the extra you’ll get on yours is going to be much less than the premium you’ll have to pay for a replacement vehicle in this market. So make sure your replacement is already lined up, and you’ll be able to finance up to 140% of the book value if you don’t reduce it with cash or equity.

If you could post a shot from the front corner that shows the front and one side, then another photo from the opposite corner showing the rear and other side. Then a shot from the drivers door, open the door and stand in front by the side view mirror and get a good of the drivers seat and the passenger and rear seats as best u can in the same photo, they are usually in better shape than the drivers seat, so not as critical for me to get a close up. And then get a good shot of any serious physical damage(over $500) inside or out. Also, if there are any issues like the tires are getting thin or the windshield has a crack or any concerns that a buyer is going to use against u in a negotiation, make a list and include it with the pictures.
