I've had both red and black and like the black the best. It's elegant and understated, and best of all, provides a level of stealth my red SC didn't. Saddle interior is a great choice with virtually any color with a few exceptions.

Gold and Saddle - My pick
I like cars with light colors, but not white. I would never buy a SC430 in black, (funerals & diplomats), white (too plain),red (fire chief's) or purple (odd color).
Silver might be o.k., but not my preference. The dark blue and green's look too much like black, but I guess if that were the only ones available, I could get used to them.
The good news for me, is my choice in colors is not that much preferred and perhaps I will be able to find a car for less money as other buyers will pass and keep on looking for either a black, white or silver. Most dealers in Southern California, seem to only stock those colors.
