Engine Temp. Guage went higher? overHeating????

Engine Temp. Guage went higher? overHeating????
My friend has a '02 128K miles SC430.
We were at idle on a food drive thru and we were at idle ("D") for about 8minutes....the Loud fan kicked in and heard it inside.
The temp guage needle in the car is inbetween the "H" and "C" (which is normal).....then the guage needle started creeping up to the hash mark above
the middle hash mark. Overheating????? luckily we got our food and sped off and the temp guage needle went back inbtw the "H" and "C" (hot and cold).
This is not the 1st time this happened. and it occurs frequently. Should this be a concern?
After checking the engine fluid coolant resovoir behind the fan engine, the "red coolant" was below the "minimum" hash mark??????
Is this correct? or should we add more "red engine coolant"????? ($25 at the dealership).
Also, what is the proper way to check the engine coolant? when the car is HOT (thats when we checked it) ....or when the engine is Cold (in the morning before going to work)?
