I use a microfibre towel and thats about it, I find that does the trick to get rid of finger prints and things like that, a little bit of moisture seems to take off any other marks that are on there.
I have had problems with the stereo cover scratching the wood panel as it closes and have had the dealer replace and realign the head unit twice. I have heard of people taking off the wood pieces and having them buffed to take out scratches but have never had this done personally.
As an aside he told me that the piece of wood is very very $$. I can't remember what he told me but it was pretty steep..

Hands down the best stuff for our dash, any dash for that matter is 303 Aerospace Protectant. Don't let the name scare you. Easy to apply and has a great matte finish to it. Plus it has a lot of things in it that help keep the dash in great shape, sunscreen for your dash, take a read.
I've been using it for years and highly suggest you try it. Spray some on a lint free cloth or towel, let it sit and then give it a quick wipe with a slightly damp towel and you're done.
