Does anyone know if it's .. "safe" to drive/use the car with Passenger seat disconnected/removed from the car?

Like will it set off Check Engine/Airbag lights?

Yes, it will see the airbag is missing.

But you can get one of these simulators to solve that problem
(Not exactly sure if that is the right simulator, but it says it is universal

Thanks Mate, Did not know those existed further research its just a 2 ohm resistor tested it real quick with the seat disconnected -- works!

I'm taking my seat out to redo/clean the leather before I do the lseats conversion -- but didn't want to not be able to drive it lol.

Yes you can. You would get the airbag warning light blinking on the dash. Once the seat is back in you will have to have it reset by techstream. Disconnecting the battery for a long while will not reset the warning light.
