I buy two bottles of brake fluid. You will probably only use one bottle but have another to top off in case you run into a bunch of bubbles and start running through it.
I personally use Motul Dot 5.1 but most people on here say it really doesn't make a difference (I agree), but I just like to know I am putting high quality stuff in my car. I mean, it's only $8 a bottle so why not? If 5.1 Motul was $50-100 a bottle, I see how it could be a pointless waste.

you'll need 4 bottles of the 12oz brake fluid recommended by Toyota. I got mine from Sewell and will be doing my 30k soon. I also got from there a couple of oil filters, oil rings, and the engine filter. I also bought the AC engine cleaner. It cost me around 65 bucks including shipping.
All you need for 30K service is cabin / engine / oil filter change. Oil change, and brake fluid full drain and fill.
Other than that you should be set. at 90/100K you should change your differentials, coolant fluids from what I researched.

"looking" at a fluid is a horrible way to judge what shape it's in, and that's true for virtually every fluid in the car...
brake fluid absorbs water over time- apart from water being bad inside generally it also lowers the boiling point of the fluid... quite significantly after a couple of years.
Hence I suggest folks never go more than 2-3 years between brake fluid changes, regardless of how many (or any) miles they put on the car.
