so I would like to install an accuair system
my question is could I / should I retain avs by using universal bags / or should I just install the air struts and lose avs?
would it be worth it keeping avs?

If you keep the OEM struts, you'll be in a world of hurt when you find out how much those struts cost you. The OEM struts (AVS and non-AVS) don't like be abused like aftermarket struts.
I ditched the AVS system and did BCR+UAS & Accuair.
If anything, this setup's a lot more aggressive than what the AVS system can dampen to.

my thought was to keep the avs till they died but that would probably be more trouble than its worth.
