I actually get a lot of clients that think this way, but honestly with the 245/40-19 the ride is quite compliant, espcially if you keep the suspension mods to a modest rate. Also as time goes on, more and more companies introduce 19" tires that are most cost effective.
The only way I could really advocate 18" for a GS, is if its for a daily driver car that travels long distances (100+ mile commutes etc), and aesthetics is 3rd priority or so. 19" fat setup always gets my vote for the overall best compromise of ride, perforamance, looks, etc

If you are willing to spend the money you can get 19s that ride just fine, but for people that want to save a few on tires and wheels 18s are a good option (which for 18s, 19s usually only last about 15k-20k so it's a yearly savings). I have 40 and 35 profile tires. I gather most 2nd gens run 35 and 40 profile with 19s? (in other words your stock sidewalls on the 2nd GS are larger then 1st gen? yes?)
19s on a 2nd gen work much better then on a 1st gen in my opinion.
after working at a tire place and seeing a lot transpire I won't go below a 40 profile tire on the front of my car, the front takes more brunt in bumps. One other thing I learned is that if you have a child that is just starting to drive and own a BMW don't let them drive it. OEM M5 wheels are VERY expensive lol.

anyone have to get there speedo adjusted? or take note of speedo changes?

I jus purchased my 19 in rims today ( this morning actually) and i keeps hearing that 19 in tires are whats really going to kill you
i jus looked at tirerack.com and i can buy 275/30/19 tires for 150 a piece ..... NOT BAD at all considering all the other are $285.oo and up i will post pixs soon but as joe on here his old wheels ....
i think 19s are great looks good and you dont have to have a kit to finish a look

like all others have said at least 19in.. 19's offer a nice compromise between looks and perf esp if you get a high end forged lightweight set of 19in .. i went from 18in to 19in and did not notice any huge diff in ride quality but looks wise
if you wanna stay 18in make sure you get with spokes that come to the edge of the rim , it will make the 18in look like19 in
these were 18 x8 fronts and 18x9 rears back in the day
see how they looked bigger then 18in
if you do 18in with a lip they will look like 17in
