Can anybody point me in the right direction of how I would go about finding these spec wheels on Tirerack? Any 5x114 cars with aforementioned offset/width application? I need to source winter wheels for my semi-wide body SC.

I don't know if you will be able to find anything on that site with those offsets. It sucks they just won't tell you what wheels they have and in what sizes/offsets. I'd search the site using a 350Z/G35 Coupe as your car because those cars can use low offsets on the factory fenders. Good luck.

I don't know how much you're looking to spend, but maybe you should try some SSR Professors. They come in 17's and you can get all types of different offsets. They shouldn't break the bank too much for 17's. Or maybe you could try some 5zigen fno1rc wheels. I think you can get some low offsets on those too, and they are cheap too.
