I have a 2008 ES350 and am about to buy 4 new tires. Current size is 215/55/17.
I would like to know if a wider tire will give me better traction and handling.

If you don't change the suspension, you will not get a noticeable improvement in handling by just going to wider lower profile tires. You might see some improvement on a stiffly sprung sporty car, but the ES suspension is soft for good ride and will be the limit in handling. What you will get is a stiffer ride and more tire noise along with a slight loss of gas mileage and acceleration. The magnitude of the changes will depend on how much wider you go. On the new 2013 ES350, there is an option for 18" wheels and 45 series tires which substantially impact ride comfort.

225 is the suggested upgrade size. I have a set mounted on mag wheels but I never got around to trying them this summer. ( I left the snow tires on!) The stock 215's look tooo small.

The 215/55R17 would be recommended for winter tires. If you would like a wider tire for you summer setup you can do either 225/50R17 or 225/55R17 either will work. Below is a link to explain winter sizing:
