NITTOs are NOT quiet. Probably about as noisy as they get.

I think I had the 555's a while back, and they were pretty damn noisy.

SO3's are good tires...you might even try Khumo Tires, they are pretty good and reasonably priced.

I have the Falken 503 rubber, very quite, and long lasting.

S03's are good, but HARD tires (they're almost like run-flats because they have a very stiff reinforced sidewall).

Toyo T1-S's are really nice tires, soft, but handle very well and quiet. The only down side, they don't last long.

Bottom line on tires: Pick two of: Price, noise, handling, treadlife.

Nitto 555 Extreme's are not that noisy for an agressive tread pattern. I also have a set of S03's as well and they are a bit quiter than the 555's but not by much.
